Originally from Nice along France’s Mediterranean coast, South City Kitchen Avalon executive chef Frederic Boldron comes from a long line of chefs and was drawn to the culinary industry from a young age. After moving to the United States in 2005, Boldron has gained experience cooking Thai, Peruvian and many other cuisines in both Atlanta and Miami, and has enjoyed diving into South City Kitchen’s sophisticated Southern menu since joining the team earlier this year. How did you get into the restaurant industry?
I come from a long line of chefs. My grandfather, my uncle and many other family members were in the restaurant industry, and I feel like it’s in my blood. I started cooking at home around 9 or 10 years-old and went to The Culinary School of Nice in France when I was 16.
What is your favorite part about being part of the FGR family?
I really appreciate the culture of the restaurant and the company. I also enjoy that this role has encouraged me step outside my comfort zone and learn more about the culinary industry through working with our culinary director, Chip Ulbrich. It’s important that we stick to the concept that’s been around for 25+ years, even though we change certain menu items seasonally, and it’s been a great opportunity to learn more about southern cuisine.
What’s your favorite dish and drink at SCKA?
I love Country Thyme Lemonade! It’s a classic. As far as a dish goes, I love the crab cake.
Where did you grow up?
I grew up in Nice, France.
What was your favorite meal as a child?
Lamb chops and ratatouille, because it’s a regional dish from where I’m from. My mom made both of those things a lot when I was growing up.
What is a fun fact about you?
My accent, of course!
What part of town do you live in?
I live in the Avalon community, so I can walk to work! It’s amazing.
What’s your favorite thing to do in Atlanta/Alpharetta when you’re not working?
I love to try new restaurants, especially in the Avalon area since there are so many options. I’m looking forward to the True Food Kitchen opening here.
What’s your (food-related) guilty pleasure?
Charcuterie, salami, cold cuts, etc.
What’s your favorite travel destination?
My hometown in the South of France! I have family in Cannes and Nice, and I love to visit with them. I highly recommend visiting Old Town Nice.
Alice in Chains. I was a teenager in the 90s so I love rock and grunge music.
Favorite celebrity chef?
Philipp Etchebest, a French TV star.
What are three adjectives that best describe you?
Proactive, dedicated and ambitious
Who inspires you most in your career?
Eric Frechon, my mentor, who has 3 Michelin Stars.
If you could invite one person, living or dead to dinner at a Fifth Group Restaurant, where would you take them and why?
Dwayne “The Rock” Johnson! He just seems very cool and is a jack of all trades. I think I’d take him to Ecco in Midtown.
